Healthy No Bake Cinnamon Roll Cookies

These healthy no bake vanilla cinnamon roll cookies are the perfect guilt-free cookie, perfect for Christmas, holidays, parties and even cookie exchanges- They are also packed with protein so could totally be a pre or post workout snack! Made with no butter, oil, flour or granulated sugar, these no bake cinnamon roll cookies are naturally gluten free, vegan, dairy free, paleo, grain free and dairy free!

For the cookies
1 1/2 cups almond flour OR gluten free oat flour
1/4 cup coconut flour
1/2 tsp cinnamon
2 scoops vanilla protein powder (optional)
2 T granulated sweetener of choice (I used a monk fruit stevia blend)
1/2 cup cashew butter (can sub for any nut butter or nut free alternative)
1/2 cup brown rice syrup (sub for maple syrup for paleo option)
1/2 tsp vanilla extract
1 T + milk of choice*

Glaze layer 1
1 scoop vanilla protein powder
1/2 tsp cinnamon
milk of choice, to thin out

Glaze layer 2
1/4 cup coconut butter, melted
1/4 tsp cinnamon
